* Remove `es-test-dir` book-scoped variable

- In `index.asciidoc`, two variables (`:dependencies-dir:` and `:xes-repo-dir:`) were removed.
- In `sql/index.asciidoc`, the `:sql-tests:` path was updated to fuller path
- In `esql/index.asciidoc`, the `:esql-tests:` path was updated idem
* Replace `es-repo-dir` with `es-ref-dir`
* Move `:include-xpack: true` to few files that use it, remove from index.asciidoc
This uses the dedicated index block API in the docs for the shrink, split, and clone APIs, rather than putting the block in as a setting directly. The specialized API will wait for ongoing operations to finish, which is better during indexing operations.

In #74138 we noted that index settings aren't copied in a clone. In fact
that's not true, we copy everything except explicitly-excluded ones,
`number_of_replicas` and `auto_expand_replicas`. This fixes the mistake.

Adds an API to clone an index. This is similar to the index split and shrink APIs, just with the
difference that the number of primary shards is kept the same. In case where the filesystem
provides hard-linking capabilities, this is a very cheap operation.
Indexing cloning can be done by running `POST my_source_index/_clone/my_target_index` and it
supports the same options as the split and shrink APIs.
